Is there a way to create, delete, and or edit the e-mails that the system sends?

Well, you can activate o desactivated mails that system send in administartion MAIN/CONFIGURATION/EVENT MANAGER

I'm looking more to add messages and or edit the existing ones.

You can edit all e-mail texts from languages area.
Adding new events means coding
